How to make
- Step 1: Preheat oven to 200 degrees Celsius. Cream the butter and the sugar until pale and creamy.
- Step 2: Add the egg and mix until combined.
- Step 4: Fold through the salt, flour and coconut.
- Step 5: Roll into small balls (about the size of a truffle) and flatten out with your hands.
- Step 6: Place your biscuits on 2 large baking trays lined with baking paper. Be sure that they are spaced well apart as they do spread quite a lot.
- Step 7: Bake for 12-15 minutes until just starting to turn golden on the edges.
- Makes 35-40 biscuits.
